What's your non-popper dove recipe?

Simple way to cook ANY* bird.

Spatchcock the bird to flatten it in a pan. Place an unhealthy amount of butter between the skin and meat around the breast and legs. Dust with with spices (I like fresh sweet paprika myself). Roast at 350 till done.

Deglaze the pan with red wine and do a reduction of that for a pour-over when you plate it up.

*should have said any small-to-medium bird. I beg you not to do this with a turkey.
