How is lamb audad? I had adult ram a while back in TX and I can honestly say I probably don’t ever need to eat it again.Boneless leg of aoudad lamb. Covered in a paste of salt, pepper, chilli, parsley, rosemary, shallots, garlic and olive oil. It's not bad the flavor was comparable to domestic lamb just tougher. I got a ram and older ewe on my trip as well and haven't been very impressed probably gonna be a lot of jalapeno sausage.How is lamb audad? Ya, the ram I had was pretty rank and probably the only meat I’ve ever had that the more you chewed, the bigger it got.It's not bad the flavor was comparable to domestic lamb just tougher. I think it was 133 when I pulled it. I let it cool and then put it in the fridge until the next day. It's easier to slice cold.Dave.....what was the IT and how long did you rest it before cutting?

Trying this for the first time. Spatchcock Turkey. Brined overnight and just put it on the smoker. 3.5 hrs from now and we will have a thumbs up or down from the family
