What’s on tap for dinner this Christmas Eve?

We do a big feast of Mexican food every year with the star being legit green chicken enchiladas - spend the whole day cooking and it always comes out tasting just right.
I love the holidays!

Just put a brined turkey on the pellet grill. Cheesy hash browns, green bean casserole, and scalloped corn. I’ll be overeating tonight.

11lb prime rib rested to room temp, just preheating the oven now

Tonight's feast:

Lots of IPAs and gin;
Massive cheese and charcuterie board with baguette;
A few different kinds of pickles and olives with salads;
Turkey;
Bone-in ham;
Loaded mashed tatters;
Green beans and carrots; and
Cookies, tarts, tiramisu and other sweets.

I had nothing but a bagel this morning in preparation to this feast. IPAs have been flowing for a while. Should be a good one!

Dad just dropped off a meal for two of turkey, green beans, mashed potatoes and gravy and dressing…

Heat and serve.

Just the wife and I for the weekend and no plans.

Despite my handle, I’m a paisan, which means Christmas Eve is our big meal and it is traditionally all seafood. My wife and I took over the cooking duties from my mother this year with an eye towards giving her a break and taking the menu in a different direction. Here’s our menu:

Appetizers:
Crab Louie salad lettuce cups
Marinated anchovies with bread and butter

Salad Course:
Pan seared squid over greens with lemon aioli

White Course:
Grilled Octopus and Gigante Beans

Red Course:
Shrimp and strozzapreti in a spicy red sauce

And I almost forgot to mention the most important dish, bacala!

Hopefully it doesn’t suck. Merry Christmas to everybody.
