What boning knife do you use?

I use a boning knife made by Big Chris. There's no good reason to spend a bunch of money on a boning knife, but you're not going to find anything better.

I have several rose handled victorinox, and a hand me down set of Chicago Cutlery from grandpa. One started as a 6” and is maybe 4” at best. Still cuts like a dream.

Cheap filet knife from Wally World and a sharpener. I can roll right through a deer. Don’t need anything fancy to process. Been using the same couple of knives for about 5 years

I use 6-8" fillet knives such as Rapala. Found a pack of P lines at Sportsman's on sale. They sharpen easy and make short work of elk quarters.

Bought an Outdoor Edge knife I saw on a butchering show and been using it ever since as my primary skinning knife and deboning knife. Razor sharp all the time and tough enough to use to break the cartiledges in the joints.
