On a family vacation for a week on the coast here in NC. Still a little early for the really fun fishing but my MiL was dead set on having a fish fry so we got to work. First day was just some croaker which are fine tasting fish but just small. Second day the whiting/sea mullet/kingfish moved in and we had a great day. I decided that we had plenty of fish so tonight we feast. Just pulled the last batch of hushpuppies out of the fry oil and we're about to chow down. Fish breading is just flour dredge, buttermilk dip, corn meal dredge. Hushpuppies are corn meal, flour, eggs, and buttermilk. 20250331_104705.jpg20250401_160329.jpg20250401_173109.jpg20250401_175319.jpg

Man, that looks awesome. You got a specific recipe on the hush puppies or do you just go by feel? Never made them before but I think you have convinced me to try with that last pic.

By this point I just go by feel. Roughly equal parts self-rising flour and cornmeal, probably 1 egg per cup, and enough buttermilk for a pancake batter consistency, maybe a touch thicker.
