Turkey Leg Green Chile Stew

in prep for the upcoming turkey season I used up the last of my turkey legs. And yes, I like green chile stew - will make it with most any game meat!

ingredients

  • 4 turkey legs
  • packet of chile stew seasoning
  • 1 small can of chopped green chiles
  • 3 cups turkey broth
  • can of hominy
  • 2 medium Irish potatoes
  • another small can of chopped green chiles
put first 4 ingredients in pressure cooker, cooked for 45 minutes on high, checked, did another 30 minutes
removed from cooker and deboned,,,

added meat back to pressure cooker juice
added 2 medium Irish potatoes, chopped, the second can of chopped green chiles and a can of hominy

pressure cooked fro 3 minutes, let pressure naturally release,,

the beauty of this is the release of the collagen etc from all the tendons and connective tissues,,,makes the broth very flavorful

and of course, had to add some sour cream

love the turkey thighs and legs,,, good eats even if they take a little more effort than the breast meat
