I like some of the guys from across the pond, Scott Rea being one. Actual butchers, not just meat cutters standing at the bandsaw all day, using pre-mixed spice packets for sausage.Same…. Who do we follow for butchering now?
Just watched a video. Showed me how to use the shanks instead of me spending an hour per shank to bone it out and grind it, then it still get stuck in my grinder.I like some of the guys from across the pond, Scott Rea being one. I watched their videos on home hog butchering. They keep pimping one on the complete breakdown of a deer. I’ll probably watch that sometime. I wanted to use a recipe from them, but there recipes were just links to their seasoning kits. The Hushin of culinary arts.
