Time for some to go elsewhere

I like some of the guys from across the pond, Scott Rea being one. Actual butchers, not just meat cutters standing at the bandsaw all day, using pre-mixed spice packets for sausage.
Just watched a video. Showed me how to use the shanks instead of me spending an hour per shank to bone it out and grind it, then it still get stuck in my grinder.

Shanks are a favorite cut. Braise them b!tches with stock and red wine, add some carrots, celery, and onion, put over polenta and down the hatch it goes!
