Texas for tourist ideas?

Another place I am considering for the Xmas break vacation is south Texas. Any places you can recommend? I know my kid would love sea world.

Roller Coasters...Magic Shows...Rent a Boat on Lake Mead...Tour Hoover...Lights downtown...Helicopter tour Grand canyon etc,etc...

me and my wife went there 2 years ago, she did not care too much for Vegas, nor did I. It was O.K. but I think it is not for us. We don't gamble much, eating is not something I look at as a pastime, but I did enjoy a good titty show, so did she
