From my thread on my snipe success this season I ventured into this recipe on behalf of @GoGriz. I will admit I did take a few liberties with the recipe.
First I spatchcocked the birds instead of just splitting them
covered them with mayonnaise as a binder for the seasoned flour
cast iron jacuzzi
almost done
In that article Hank Shaw talks of high heat roasting snipe and hitting them with balsamic vinegar. I used a balsamic glaze in this instance
This beauty set the flavors off perfectly. @GoGriz you need this in your life
