These are DIY meat bars that copy a certain commercial snack. They are delicious, healthy, fairly easy to make, and require no refrigeration! Photos below.
Ingredients:
3lbs wild game burger (I used 50/50 venison and antelope this time around)
8oz uncured bacon - diced
1 cup dried cranberries - diced
1 tablespoon ground black pepper
1 tablespoon garlic powder
1 teaspoon smoked paprika
1/2 teaspoon ground coriander
Critical for shelf-stable preservation:
2 tablespoons cultured celery salt
1.5 teaspoons encapsulated citric acid
I get the citric acid on Amazon and the celery salt from 'the bearded butcher'. A standard order of each lasts a long time.
Steps:
Mix everything in a bowl EXCEPT the citric acid. Once everything is well-mixed, gently fold the citric acid in.
If you want a softer bar (more like the commercial bars), add 1/2 cup cold water to your mix.
Lay parchment paper on your dehydrator trays, and spread the meat mix out at 1/4" thick.
Dehydrate at 160deg F for 2hrs, then 145deg F for 10-12hrs.
Remove, let cool, chop into desired sizes, and vacuum seal.
These are incredible hunting snacks and fuel on the hunt. Enjoy!
