Here is a quick way to cut out a rack of ribs, using brush loppers:

We also find brush loppers handy cutting a trail through the willows for jet sleds.

I'll back your statement up a 100 percent. I went out in the early 90's helping the MDNR find a moose collar mortality signal in an area that I knew very well for navigation. Seeing the ribs cut that fast and clean for internal organ investigation impressed me. Those brush cutters worked awesome for rib removal and not disturbing organ conditions and location.
