Mom's Dinner For Today

Salisbury steak with lots of onion gravy.
Mashed potatoes with sour cream, chives, garlic, and butter.
Fresh picked spinach cooked down and seasoned with drippings, onion, vinegar, and a touch of salt.
Pumpernickel rye bread with butter.
Home made banana nut bread.
Sliced peaches.

Chow Mein Noodles
White rice with butter and soy sauce
Home made cherry crisp for dessert.

Chime Changas with sour cream and salsa
Nachos with salsa, jalapeno slices, olives and lots of melted cheese.
Mixed fruit cup
Sopapillas with honey and powdered sugar for dessert

Sunday she don't work and we're going to the Chinese Dragon buffet!!
General Tso's Chicken
Black Pepper Beef
Coconut fried shrimp
Lo Mein
Won Ton Soup
Springrolls
Crab Rangoon
Broiled milk fish
fried frog legs
scallops,clams, and oysters
Baked salmon
Pepper steak
...and that's just the first dish!!

Hot Roiast Beef Sandwiches!!

Big fat helpin of mashed potaters slapped down between two homemade buttermilk biscuits split in half then the whole mess covered with roast beef gravy and topped with thin slices of that Roast Beef "X" up above then covered up with more gravy. On the side there be creamed peas, yaller corn, and steamed brocolli along with a side of cole slaw, and some Jello for dessert cause; "There's always room for Jello!"

Chicken patties with cheese, whole kernel corn seasoned with course mustard, basil, butter, salt and pepper, steamed brocolli, dinner roll, and strawberry jello with pears.

Ribeye Black Angus steaks grilled over charcoal, (one rare, one burned!) Sauteedonions and mushrooms on the side. Mashed potatoes with roasted garlic, chives and sharp cheddar cheese, green beans almondine, Garlic bread, Waldorf salad, and pecan pie.

Green Bratwurst; Green Mashed Potatoes with sour cream, garlic, onion and genuine butter, colored with Green food coloring and garnished with a sprinkle of fresh Green parsley; Fresh Green Cabbage, steamed in chicken stock and seasoned with fresh onions, whole pepper corns, corriander seed, a pinch of chopped basil, and a single bay leaf; Fresh Green asparagus steamed drained salted and buttered while still crisp, Green skinned apple slices with jello and pears for dessert.

I have to go make dinner now, and it will have to be some thing better than macaroni and chese, see what you've done!!!

I love mac and cheese!! I make it with four cheeses and bake it just to gooey; not browned. I got a Johnny Marzetti recipe that's so good I make enough to feed 12 and it usually lasts the wife and I maybe 3 days.

Today her lunch bucket had:

Tuna salad with lettuce and American Cheese on Pepperidge Farm Pumpernickel Rye, A side salad of iceburg, carrots, red cabbage, onion, and spinach dressed with sun dried tomato vinegrette, and a serving of mixed fruit for dessert.

She said the inmates got a real kick out of her Green mashed potatoes. Had them laughing until they started heating up in the microwave then the laughs changed to drools, (Onion and garlic got to them!)

Sounds like a winner to me!

In Ma's lunch box today we have:

Baked pork loin chop seasoned with salt, pepper, garlic powder, onion powder, ginger, and apple slices marinated in white grape juice. The whole thing is dressed with a gravy made from the pan drippings, grape juice a teensy bit of smoked ham base and a little corn starch for thickening. Brocolli hearts with carrot slices and brocolli florets parboiled in salted water then dressed with warmed chicken stock, Escerole salad with shaved carrots and dressed with sun dried tomato vinaigret, and sliced golden delicious apple with ranch dipping sauce. (Kitchen sure smells nice!)
