My neighbor has a Hawthorn tree and lets me pick them. I have read there wild in places too.
It takes about 10 pounds hips to get around 6 cups of juice. I freeze them first to break up their cell structure, then simmer them for about 3 hours, mashing them gently as they cook down. Their seeds have cyanide in them so you don't want to break them up. Then I put the Mash into a jelly bag and let it drip all night, occasionally squeezing the bag. When that is finished I filter it again with a much finer bag to get more of the solids out. It still looks milky and yellow. That's the juice ready to cook. For gummies, I use gelatin and sugar cooked and molded in silicon gummy molds, which turn a pale pink and clear, or I add some coloring. Jelly is just sugar and Leamon juice no pectin it has it's own, but takes a week or so to set.
It is a brain and heart booster. Lowers blood pressure and helps slow aging of the brain.
It also has a very unique flavor that is very good indeed.
