Hanging Euro elk skull - ideas?

I just moved into a new house. I have a big Euro elk skull that needs to go up on the wall, otherwise it just sits on the floor and is in the way. The room I'd really like to hang it only has 8' ceilings and it doesn't go up the wall high enough to be out of the way before the tines hit the ceiling. Next option is over the fireplace. 9.5' ceiling in that room so plenty of height. But no wall stud in the center to anchor a hook into so the skull is centered. I just don't trust the dry wall anchors I have for the weight of the mount. Anyone have tips on how you've hung a heavy mount without a wall stud?

I use the 2- 75lb anchors but also use a plaque which i imagin spreads weight out nice and even. Never had issues...
