Hey all,


Made some elk pepperoni sausage the other week, turned out very well.

Wonder what other types of sausage would work well with venison?

Not sure if salami would do well as it's a milder flavor that the elk will overpower easily unlike pork or beef.


Open to ideas

A recent batch of mine had a bit of a void problem due to drying too fast so I’ll look into the casings you mentioned. Hadn’t heard of that.

Cool oak or pecan smoke adds a very nice dimension of flavor if you’re still looking for another idea. No need to ferment that, just smoke and dry.
 
Found a kit on Amazon. Worked pretty well to be honest. Came with bacteria cultures and the special casings to help control moisture correctly. Overall pretty happy and I think I can reuse the casings for the next batch

What kit was that? I'd like to make some salami and have a ton of trimming off my last elk still
