I recently did a couple big tomahawks as 1 hour on low/smoke on the pellet, then 4 hours or so in the sous vide with butter, then finished up with a hard sear on the grill. I was serving them at a get together with friends and the sous vide really helped with making sure the timing worked with everyone else being prepared. It was simply amazing.
