If that deer is hit just about anywhere in the head with an appropriate calibre, the shock alone should kill it. Look at the bloodshot from a shoulder impact. Imagine that same area of destroyed surrounding flesh imparted to the soft tissue of a brain. Any one of several major blood vessels ruptured in the head and an animal will black out, at the very least. The brain may be a small target to hit directly but it is a delicate vital organ susceptible to serious collateral damage from indirect hits. Much more so than other organs in the "boiler room". I have read of elk and moose that survived being shot through both lungs.I definitely do not trust my marksmanship skills enough to aim for that brain.
