I wrap with butcher paper, usually around 170 through to 190 or so, but I’m using a BGE, so I don’t have the space for a full packer brisket. And it typically has a great bark on it by the time I wrap it.
I subscribe to the Franklin method, which is a departure from how a lot of folks do it. That is, 50/50 coarse salt and pepper rub, run my smoker (BGE) a little hotter (275), wrap with butcher paper through the stall, and cook to 203 internal temp.
I love doing a long smoke in the winter. One of the primary advantages of the BGE (I’m not a militant “BGE is God!” type, btw) is it holds heat (and moisture) really well and doesn’t seem to be as prone to adverse effects of wind or cold temps.
