I’m going to make stock from my turkey carcass. I like to let it go in the pot for 12-18 hours with carrots, onions, celery, salt pepper, herbs like thyme, oregano, basil covered in water. What else do I neeed to add?

For sure bay leaves and garlic. I don’t have any fennel, so we’ll have to go without.Bay leaf for sure also like a fennel bulb but don't always have one.
This made a lightbulb go off in my head! I think I will coat the carcass in evoo but roast it on the traeger at 250 for a hour or 3. A little wood fired love can’t hurt anything!Coat the carcass in olive oil and roast in the oven to brown it first. I made some pheasant stock that way and it turned out really tasty.
