I’m going to make stock from my turkey carcass. I like to let it go in the pot for 12-18 hours with carrots, onions, celery, salt pepper, herbs like thyme, oregano, basil covered in water. What else do I neeed to add?
 
Coat the carcass in olive oil and roast in the oven to brown it first. I made some pheasant stock that way and it turned out really tasty.
This made a lightbulb go off in my head! I think I will coat the carcass in evoo but roast it on the traeger at 250 for a hour or 3. A little wood fired love can’t hurt anything!
 
I finally got around to this. I smoked the carcass at 250 for 2 hours and also had the vegetables on a tray next to the bird. Put it all in the electric roaster covered with water and herbs at 250 overnight. Added more water in the morning. I meant to shut it off after work but I forgot so it went all of 24 hours in the roaster. It’s dark, it’s rich, it’s smokey, I think I love it. It’s in the fridge now and I’ll work on canning it tomorrow.
