Laguna (aka Trout Ala Doug)
2 Fillets Per Person
All Purpose Flour
Green Tabasco
Sea Salt
Black Pepper
Place fillets in a plastic zip top bag and add enough green tabasco to coat. Rub into fillets and put the bag in the ice box for 30 minutes. At 20 minutes begin to heat a heavy bottom skillet. When hot, add olive oil. It should just smoke and there should be just enough oil to cover the bottom of the pan. Dredge trout in flour and shake off excess. Let them stand for 5 minutes on a baking rack (this helps form a more sustainable crust). Place 2 to 3 fillets in skillet at a time leaving room to easily flip them once they have reached a golden brown. When the fillets are golden brown on the second side, remove and place on another baking rack. Immediately sprinkle with salt and pepper
