Red meat Friday (instead of Black Friday) went down in the kitchen at my house this year with 14 pounds of "Old fashion bologna" and 27 pounds of brats completed. I cheated and used Hi Mountain's cracked pepper and garlic summer sausage kit for the bologna which had the recipe for old fashion bologna as an option. Stuffed it in 3 inch casings and cut it into lunch meat. Made for an awesome sandwich for lunch today.
The brats were from a kit from Cabela's but the onion and garlic seasoning was supplied by PS seasonings. Best brats I have made so far! I felt as though I was putting too much back fat (33%) in the mix but in the end the brats turned out juicy and flavorful. Will be ordering Polish sausage seasoning from PS and give that a shot early next year.
