Recommendation for Meat/Gear Saddle Panniers

As a group we have ripped out 2 different Outfitter Supply Trailmax Saddle Panniers over the last 3 years. So I am in the market for a new set, both times have been with just an elk quarter on each side. I currently am looking at Montana Canvas Pannier, just wondering if anyone out there has had good experience with their set. Prefer it to be easy enough material to roll up and pack behind my cantle.

I bought a few canvas panniers a few years ago and have packed out about 10 elk with them without a problem. I think the ones I have are made by Saddle Barn I bought them through a ranch supply store.
