Thawed and filleted the two big rainbows I caught last week.
Found a pecan roasted trout recipe.
I’ve been experimenting with pork panko. It is essentially chicharrones powdered in a mortar and pestle. 100% keto friendly flour breading replacement.
Chop up pecans very fine. Mix with pulverized rosemary, salt and fresh ground pepper.
Dip filet in breading, then beaten egg, then pecan mix.
Bake on cookie sheet skin up until fork tender. About 12 minutes for 4 large filets.
Serve drizzled with Beurre Noisette lemon sauce.
Looks better on the plate than on the cookie sheet.
