You should really try some of the suggestions above. Poke and seared is amazing. Sashimi is even better!

Wrapped in thin cut bacon and grilled is also great for those afraid of raw.

My kids love seared the best.

10-20 second sear on both sides on hot flat top. Wasabi, ponzu and soy mixture Sauce for dipping. We do it every year in elk camp. Quick easy and incredible, especially albacore.
 
I love it raw. Looks great though. How does it freeze? Down here in Miami we hardly keep any blackfin after a few days it is is all eaten.
 
I would love to start doing a yearly fishing trip in TX for a good fish supply. There is no salt water fish in the stores out here. Was this a chartered trip? Best time of year for reliable fishing, any recommendations for boats/guides?
My buddy is going in November and december , yes it’s a charter and has a opening
