Great with walleye. We just use guac instead of the crema. Cabbage portion adds a crunch and some extra flavor.

Awesome way to use cubed up round roasts, shanks, neck roasts.

Alternative way to use your livers. I add more fat than what the recipe calls for.

Salami, soppresetta, pepperoni, bresaola, corning, pastrami recipes are all legit. I use them with wildgame and if they require dry curing with umai dry bags.
