You need:
2-3 pounds of Wild Pork sliced into a steak between 1 1/2 and 2 inches thick. I've found that a butterflied pork roast works well.
1 Cup of canned cranberries
2 cup of Mandarine Orange Slices
1 Cup of Brown Sugar
(If you like mushrooms, you can add mushrooms to the mix. Just remember to throw away the juice and not add it to the marinade.)
Tabasco Sauce
Soy Sauce
Rice Wine Vinegar
Drain the cranberries and Orange slice into a bowl and set the juices aside.
Mix the drained cranberries and Orange slices with 1/2 cup of brown sugar.
In the bowl with the juice from the cranberries and orange slices, combine 2 tblsn. tabasco, 1/2 cup soy sauce, 1/2 cup rice wine vinegar, 1/2 cup brown sugar.
Lay the meat out flat and lightly oil the top surface. Arrange the mixture of cranberries and Orange slices in the middle and roll the steak around it. Pinning it with tooth picks to keep it closed.
Baste the outside with the marinade and place the roll in a shallow roasting pan. Pour the remainder of the marinade in the pan and cover the pan. Cook in the oven at 350 degrees for 45 minutes to 1 hour. Baste the roll with the marinade periodically.
While the roll is cooking, prepare 3 to 4 cups of long grain white rice. Uncover the roll and baste one final time, then lay the rice in the pan around the roll. Leave uncovered and cook for 10 minutes.
When done, place the roll on a plate and serve with the rice. When sliced, it should serve 6 to 8 people.
