My son and I spent the afternoon working up a deer that my dad's neighbor shot and gave to us. Since we have plenty of steaks, roasts, and burger, we decided to make all jerky, snack sticks, and stew meat out of this one. It was a young buck, probably 160# on the hoof. We ended up with 16# of whole muscle sliced jerky, 16# of ground meat for snack sticks, and about 10# of real high quality stew meat. I have batches of hickory, original, and peppered... now we just have a whole lot of drying to do. Glad the boy is willing to dig right in and help. He is growing up too fast.
