Grind duck with bacon ends 70/30 ratio
6 scallions chopped
2 T fresh chopped cilantro
1/4 tsp Chinese five spice powder
1 1/2 tsp salt
ground pepper to your liking
Mix together to make patties
Sauce
3/4 cup plum jam
1/4 cup honey
2 garlic cloves minced
2 tablespoons rice wine vinegar
1 T hoisin sauce
dried red pepper flakes to liking
salt and pepper
Serve on Brioche buns with shredded Napa cabbage
