Does anyone make their own deli style turkey breast lunch meat at home?
I have been thinking of making the heavily processed style of lunch meat that you see in a grocery store deli. I know that manufactured turkey is "massaged" and tumbled to extract proteins before being pressed or vacuumed into a shape for smoking and curing. Have done this with red meat to make brats, sausage and other red meat products but want to expand into poultry.
Could the same processes be used on turkey? Wondering if anyone has tried it or knows of a resource for information.
