Here is a simple appetizer/hors d'oeuvres that I like to make. Its very simple and a bit of a pain to do but worth it in the end. I brown some ground antelope (deer, elk, etc) and season with salt, pepper, and a pinch each of garlic powder, onion powder and chili powder. Take an egg roll wrap and egg wash the corners so it holds together. Spoon in about a tablespoon of ground meat, a teaspoon of chopped green chili's and a little shredded cheese - sharp cheddar, Gouda, pepper jack, etc and roll up tightly. I prefer to brown in a skillet over deep frying but I imagine the latter would be good too. Goes well with salsa, queso or chipotle sour cream.
