Thanks for all the advice earlier. Finally had time to make one of these up. Pan seared and basted with an herb butter I make. Finished in the oven. Roasted potatoes and carrots, topped with an onion and mushroom gravy made from the drippings.

That looks awesome! Haven’t ever hunted antelope, those pictures make me want to try and pick up a doe tag or two 😂
 
Pan seared sage grouse breasts on toast points with wilted greens and chimichuri sauce for appetizers.
 
How did you cook them. Can't post a pic like that and not give recipe. Looks great.
room temp meat, seasoned with salt and pepper and a little garlic. seared in a pan with some oil and at the end herb butter. Basted the meat with melted butter. Put them in the oven to finish. Tossed my onions and mushrooms in the pan cooked them down. Added Au Jus let that simmer and thicken a tab of butter to make the gravy smooth at the end. That was about it.
