2025 sausage fest!!

Well our annual sausage fest is over!! What did we do and what did we learn! 4 deer and an elk. Sausage was mixed with beef and pork to make it go a bit further. Lesson 1 first time doing hot dogs. Should have read up on how to use the tubbed casings before trying them. Major pain in my rear end. Trying to get them on the stuffer without them folding over themselves was difficult and they broke easy. Was my first time using sheep casings and am guessing they are a bit more fragile than hog. Lesson 2 not all casings are created equal or the meat market screwed up lol. Ordered two hanks for brats. We'll they were very large a 6in "brat was almost 8oz" a little upsetting when you were banking on them being smaller. Haven't grilled anything up yet I did cook one hot dog to finish on the smoker and I have to say I'm very pleased with how they taste. I'll be doing them again just need to get better at those casings. All seasonings were bought from owensbbq here in ND.

The smoker i made works great. Should have flipped the pepper sticks once, some got a Lil crispy on the bottom but only 2 of the 16 pans. My guess when the chips caught fire the temp spikes and caused it to burn a bit.

Ground burger
75lbs of elk burger 10% beef fat added.
125lbs deer burger they go 50/50 deer and 80/20 burger for their ratio.

Brats
25lbs Buffalo wing with blue cheese
50lbs loaded jalapeño with cheddar
50lbs hatch chilie with pepper jack
50lbs country style

Hot dogs
25lbs Regular
25lbs jalapeño cheddar

Pepper sticks
25lbs hit blend with pepper jack
25lbs jalapeño cheddar
25 lbs normal

Summer sausage
50lbs
