Marcus’s Famous French Fries

– Using a food processor or knife, cut potatoes into french fry size

– Blanch using hot water and salt

– While potatoes are blanching, create a batter by mixing flour and seasonings.

– Strain French fries from blanch bath

– Dredge French fries in batter then gently drop into hot oil.  For best results, try and maintain an oil temperature of 350 degrees

– Remove from oil and dry on paper towel.  At this time, test a fry or two and adjust seasoning as needed.
