I wouldn't consider the 300 bo unless your going to run it suppressed. The 6.5 and 6.8 are great hunting round. You will find more parts and factory ammo for the 6.8.
I picked up a Remington 700 classic a couple months ago. My dad has an old Remington 722 257 Roberts that he killed a pile of deer with. I killed my first rifle deer with it 22 years ago. I had been wanting one of my own for a while and was thrilled to find a 700.

I would go for the 6.8. I've got a AR 6.8 that I love. Recoil is almost non existent. Lots of choices for factory ammo. Tons of reloading bullets, and reloading really opens up the cartridge as factory ammo is fairly anemic. Thar being said, factory ammo will still be fine on deer out to 300...

If I'm going the practical route, I would pick a Remington model 7 syn/ss, in 260, and a Tikka T3 300wsm. Since I like to have things that are a little different, my outside the box combo would be a Ruger #1 257 roberts, and a pre 64 winchester in 375 H&H.
