Like you said use those up first. How long they will last will depend on how much air there is. The air will cause oxidation which is an off flavor. You can trim those spots to help if necessary.

I’m sure your match bullets will be fine. Most varmint bullets are thin jacketed. In fact many people like them not to pass through to preserve the pelt.
For me it depends on how much time I have and how empty the freezer is. We can shoot buck or does for whitetail in most of Idaho. I try to hold out for a decent buck but generally don’t pass many. Mainly if it overlaps elk season and I am focusing on that instead.
I wouldn’t reccomend “aging” squirrel meat. I don’t know specifically about squirrel but generally smaller animals need less time. Also they would dry out and there wouldn’t be much left.
