    Funny you say that, my local game processing guy offered me a very nice side gig job to help him keep up during the season. seems like lots of folks don’t have a clue how properly skin, cape , dry age , cut up , make sausage, ect

    I like a 243 , but IMO I would go 6.5 or .270, 308 , recoil is manageable and got room to grow for +/- size game , no break , seen a break create a flinch from noise

    We never did when our plant was open , we could freeze and cut into manageable pieces in a day, or even better hang and dry age like a beef , insurance would never allow something like self service around saws, health department would have a shit fit !

    Yes , wet brined for couple days, then coat with black pepper, slow smoked and electric slicEd or butter milk soak over night, rinsEd then cooked in a ninja 3-1 slo cooker, served on sourdough or French bread sandwich we also have place that makes both baloney & hot dogs for us, deer , turkeys...
