Ive got a Hunter in 3006 that loves 180 grain fodder of most every stripe. First 2 rounds are a figure 8, #3 opens the group to around an inch due to vertical stringing, and I have no idea where the 4th round goes as its off the 4" Shoot-n-See target.

You can be brought up to a usable level of proficiency on a PROPERLY FITTING shotgun or AR in an afternoon.
Getting to the same level with a handgun takes much, much longer.
I'd recommend finding a 20 gauge shotgun in a youth or bantam size and topping it with a red dot. Find some quality copper...
Don't forget that most common calibers have low recoil ammo available for them.
Inside of 300 yards I'd be comfortable using the low recoil ammo on everything but bull elk.
Of the listed choices I'd go 7mm-08 or one of the 6.5's.
