I cooked it double indirect at 220 to a very careful 118…rest for 30m for the Kamado to come up to temp (650+) and then manage the most gentle reverse sear…final served temp was not measured but I’d venture the guess at 120.

I can confirm a .375 H&H with a 300gr. Partition at 2,550 will get the job done on a Texas whitetail…but I’m not so sure you wouldn’t be a little under-gunned there. :)

For me the answer was properly fitting insoles. Sole & Second Wind insoles that had a proper arch support changed everything for me...
