I've gotten into the habbit of turning them into four meals. Each lobe of the breast gets set aside (1 full breast = 2 meals), wings and legs = 1 meal, and the carcass gets turned into soup.
If I'm feeling frisky I do like to smoke them whole.
This is a BIG batch of brine - I usually only...
Cured and smoked some bacon today. This is from a domestic pig (we buy very little meat but I'm bored and needed something to do). Pork belly, cured for three days and smoked for a couple hours. First time trying and it turned out pretty dang good!
Since I'm still fairly new here, I've decided all you fellas contributing to this thread are undercover PETA members. No way you guys are eating this good and not all weighing in at 300lbs! Not a chance your climbing any hills, ha.
Just kidding obviously, some fantastic looking dishes here...
Found this cool fossil while elk hunting. Super thick dark timber (think bedding area) about 9,000 ft. Makes you think twice about what our world use to look like.
In case anyone is headed to eastern Colorado it appears the Yuma County Commissioners have petitioned Parks and Wildlife to postpone the turkey opener. Saw this one coming, buddies in eastern CO have said the locals have been complaining for weeks not wanting all the Denver guys showing up...
I guess I'm both buying and selling. Yesterday I converted a traditional IRA yesterday to a ROTH, figured this was a pretty good time.
Have no idea where the bottom is but in my uneducated opinion at least we're starting to see the light at the end of the tunnel (Italy & China). A lot of...
We received official notification last night that Fort Collins, Colorado students will not return to school this year. Just got the same report from a cousin in the greater Denver area. Strange new world, overnight...
This is pretty random but you've mentioned that your "How to Keep your Wife Happy" podcast (I'm sure I'm screwing up the title) has been hugely popular. One of the things I like about you is your practical side and your very analytic brain (I've never seen anyone else put so much effort/focus...
Like others, I own a PILE of tents. Bivy sacks, lightweight backpacking, dome, outfitter, tipi with stove-jacks and backpacking stoves (Kifaru). For our September elk hunts in Colorado I typically use the tipi and take the stove. Most years the stove doesn't even get assembled. When it does...
@noharleyyet You know that's a funny question, I would say so, that it is similar to pork. It's definitely fattier the deer/elk, which I find a little odd since they make up a large portion of their diet. The only thing i can attribute the fat to is a high percentage of porcupines in their...
Dang @mmazour, sorry I just saw your post. I was coming back on here to answer my own question in case anyone else was searching in the future.
I ended up doing something very similar to what you're considering and it turned out fantastic. I used a front shoulder, approx. 9lbs - bone-in (no...
