This was actually the spring load, 180lbs of pork butt.
A couple weekends ago was 140lbs of butt, a brisket, and a turkey followed up by 25lbs of baccon and the roaster cooled.
Should make it through winter now....

Learned from my dad way back when. Like to think we've improved on the process over the years. Nice thing with north American big game is they are all pretty much come apart in the same manner.
We've done our own for years, decades I guess. Started with boning them all out ourselves and taking the trim to be processed elsewhere. Now we grind, season, stuff, smoke all our own, or any combination of that. Never really trusted the local butchers with the animals, and the signs on...

Lead sled, controlled breathing. I shoot from 100-500 actual yards and record the ballistics/clicks on the scope and make a cheat sheet to put in my shell holder on the stock.

I also just found Fresh Tracks on Prime and have been binging through the seasons. Did not draw
