I put a Vortex Viper HS 2.5-10x44mm on my Browning X-Bolt Hell's Canyon Speed in 7mm-08. I plan on using it for basically everything from pronghorn to elk.
I'm in the same boat. Live in Chicago, fed up with my current job and want to move west and (potentially) change careers while still being able to afford to live. Unfortunately my current industry (corporate investigations) does not seem to pay very well outside of LA, Chicago, NYC, etc.
Flew to AZ and back on Southwest with my Exo 3500 as a carry-on. No issues other than the ziploc of protein bars and gummy bears requiring additional screening by TSA. Technically it doesn't fit in the carry-on dimensions but I didn't have an issue.
Got another range visit in yesterday with much better conditions. Shooting from a knock-off Atlas bipod with a rear bag I was making repeated hits on a 12x20" steel silhouette at 600 yards with Hornady Precision Hunter, so I called that good to go and ordered 8 boxes of it.
My Exo 3500 is my one pack to rule them all. I've used it for pronghorn, deer, as a potential packer on an elk hunt, waterfowl and turkeys. It also is an excellent pack for hiking/backpacking as well. It may be $550 but if you use it for everything rather than having a variety of packs it takes...
Echoing everyone else, to the point where I lost my rangefinder in a moment of excitement my first year hunting pronghorn in WY and I didn't hesitate for a second buying a new one for the second trip. Pro-tip: Use a lanyard/tether on it.

For a do-everything semi-auto shotgun in that budget it'd be real hard to go wrong with the A300. A used Benelli M2 perhaps, but for brand new the Beretta is about as good as it gets for ~$600. Personally I'd go with the synthetic version over wood but that's up to you really.

Got out to the range today.
It was windy as hell, 18-20 mph primarily from about 160-180 degrees behind but enough that it was blowing me around a bit. At 100 yards everything performed adequately off a bench and solid rest. Of the 4 ammo types I tried, Nosler E-Tip, Hornady Precision Hunter...
The 700 in its current form unloaded without bipod or sling is 8lbs 11.3oz and the Browning is 7lb 11.7oz unloaded no sling or bipod. Not dramatically different, but the Browning feels much handier and well balanced.
That's fair, though thanks to the lightweight stock the whole 700 package weighs under 10 pounds unloaded which isn't ultralight but still lighter than a lot of options. The mag was a bit of a necessity since I couldn't get the internal mag to feed more than 2 rounds before jamming.
Aside from opinions on cosmetics, how exactly is it messed up? It shoots consistently 1 MOA with good loads and has produced repeatable hits on a 12" plate at 600 yards.
