My moose had a previous skull injury that had rehealed. I'm guessing he got roughed up pretty good at some point by another bull, given the shape of the injury.
Depends on the type of sausage and the texture I want. If I want a coarser, more rustic sausage, usually just once. If I want a smoother mouthfeel, or if I'm making an emulsified sausage, then twice.
Moose is the perfect skull for a euro mount, IMO. Everything (antlers and skull) lies in the same plane, so the whole mount can sit flush against the wall. It's a very classy look.
