My Dad helped me pack out an Elk 7 months after he had his right knee replaced. Doc said it was good and I limited him to about 30 pounds per trip. Good luck on the upcoming surgery.
I'd shoot the bullets. If the 280 shoots the 140's really well and you want to simplify your "bullet collection" - by all means go with it. If it doesn't like the 140, I'd do some development to get it shooting the way I wanted - which might mean switching bullets.

I have a 6.5 X 55 in the safe, patiently waiting for my kids to get a little older. I've long thought of the progression for their shooting education and that Caliber easily made the cut.
I just grind straight venison - and freeze that. I will mix in fat at different times depending on what I am making (burgers, sausage, jerky, etc). I've found that not adding fat or beef / pork trim, etc helps keep the meat longer in the freezer as fat is usually the first thing to turn.

Stevens Model 35 was a pretty cool little gun - it was produced in the 1920's - but without the rifled barrel you need an FFL as that gun is listed.
