How about this for a proper sheep rifle!! Ruger 1B in 6mm Remington with a 6x42mm Leupold scope on it. Killed lots of coyotes, antelope, deer, and a couple elk with it. It's a 1976 year build in the 200th anniversary of the good old USA.

130 or 140 gr. Accubonds for everything. Use 130 or 140 gr. Ballistic tips for practice. You might find they shoot the same load as the Accubonds like and very close to same POI. Use those for coyotes and other varmints also.
Your 7mm will work just fine. My father shot lots of antelope with a 7mm using his 160 gr. Partition handloads. A good 160 gr. Partition, Accubond, or E-tip would work superbly.
165 gr. Accubond using the same load as you use for the Ballistic Tip. They might very well shoot to the same POI as well as being very accurate. If so you can then use the BT's for practice, coyotes, etc.
