I hear similar and get help from Mrs. Redman but she hates the butchering/meat craft part. I just remind her months later how it was worth the time and effort. She tends to forget every fall when we do it again.

I leave the tent in the truck and go with a tarp, waterproof bivy, sleeping bag liner, and a synthetic fill 30 degree bag. Keep it light and if you get cold add clothes. I do have down filled bags but if they get wet there goes your your warmth and take forever to dry out properly.
Funny a co worker and I were just talking about this very thing. I keep them in fresh water and feed them hot dogs. Change the water daily until it is clean. Then butcher.
I have been holding out for along time for some RL26 to push 143 Hammer Hunters out of my 7 Rem Mag. I think I would have a better luck getting a clear picture of a sasquatch ridding a unicorn while trying to rope a Chupacabra!
