Stuck is when your tires are in contact with Mother Earth but you can't get traction (Think wet and sticky Bentonite clay so prevalent out West). High centered is when they no longer are in contact with anything, brought about usually by too much throttle or bad decision making.
I had the shortened version, a '78 Bronco, same color and outfitted the same as yours except I had Posi and dual block heaters. Got thirteen MPG no matter how it was driven, and never got stuck. I got high centered twice, but never stuck.
