I've done it with no fat added. Left it coarse ground, and used a clamshell burger press. Held together well for me.

I get what you're saying, but you don't have to add some fat to it. It is completely fine without it unless you cook the living hell out...

I don't cut any of my wild game with pork when I grind it. I prefer it that way. My antelope smash burgers are pretty f'n delicious!
